Roasted Red Peppers over Fire

I’ve been looking forward to this day since the seed packet labeled “Sweet Red Italian Cooking Peppers” arrived.

These sweet peppers are AMAZING when roasted over the fire. I am planning to slice these and pack them in olive oil to save in the fridge for this winter.

They will be SO good in homemade roasted red pepper hummus or pasta with a roasted red pepper & garlic butter sauce.



Roasted Red Peppers over Fire

Whole, fresh red sweet peppers

Place peppers on grill over hot fire or on a propane grill with fire turned to medium

Roast until skin is blackned and pealing, turning to cover all sides.

Let cool.

Peel blackened skin off of peppers and discard


-Use fresh or may pack in oil for storage-

Pack red peppers tight into bottom of glass mason jar

Cover peppers with olive oil

Use knife to release any trapped air bubbles

Top with more oil, ensuring all peppers are covered

Store in refrigerator all winter long
